The microbial enzymes 5'-adenylic deaminase (DN-50000) and 5'-phosphodiesterase (RP-1) are safe for food flavoring. Studies found no significant adverse effects in rats, establishing safe consumption levels for these nucleotidases.

Main Results:
- DN-50000 showed no significant dose-related adverse effects, with a NOEL of 2000 mg/kg. Increased submaxillary gland weight occurred at 8000 mg/kg.
- RP-1 also showed no significant dose-related adverse effects, with a NOEL of 500 mg/kg. Increased submaxillary gland weight and hypertrophy occurred at 2000 and 8000 mg/kg.
- Neither enzyme demonstrated mutagenicity in the Ames assay.
Conclusions:
- DN-50000 and RP-1 are safe for use as food flavor enhancers at the tested levels.
- The observed submaxillary gland effects are considered adaptive and reversible, similar to other enzymes like pancreatin.
- The enzymes do not pose a genotoxic risk.
