    Summary

    Severe Helminthosporium maydis infestation did not impact high-moisture corn (HMC) preservation. Microbial counts and storage conditions were monitored over 220 days, showing no significant difference in spoilage.

    Background:

    • High-moisture corn (HMC) is susceptible to microbial spoilage during storage.
    • Fungal infestations, such as Helminthosporium maydis, can potentially affect HMC quality and preservation.

    Purpose of the Study:

    • To investigate the effect of Helminthosporium maydis infestation on the microbial dynamics and preservation of high-moisture corn.
    • To compare spoilage patterns in infested HMC with normal HMC under similar storage conditions.

    Main Methods:

    • Two silos of normal HMC and two silos of HMC infested with H. maydis were used.
    • Microbial populations (mesophilic bacteria, lactobacilli, coliforms, yeasts, molds) were enumerated over 220 days.
    • Temperature and gas levels were monitored throughout the storage period.

    Main Results:

    • Sequential changes in lactobacilli, yeasts, and molds were observed during HMC spoilage.
    • Heavy infestation by H. maydis did not significantly alter the microbial populations or spoilage progression.
    • No appreciable difference in HMC preservation was found between infested and normal corn.

    Conclusions:

    • Helminthosporium maydis infestation has a negligible impact on the preservation of high-moisture corn.
    • The natural microflora and storage conditions play a more significant role in HMC spoilage than H. maydis presence.
