Summary

Sanitation standard operating procedures (SSOPs) in shell egg processing did not show significant differences in bacterial counts before and after operations. High bacterial levels were noted on recirculating water tanks, rewash belts, and vacuum loaders, indicating areas for sanitation improvement.
