Abstract:
The actual nutrition of children in nurseries taking into account the losses of food substances during food cooking and realization is inadequate to the current physiological standards for all food substances, especially, with respect to vitamins and mineral elements. This inadequacy has been proved by the laboratory and clinical parameters of vitamin status of children. In the winter-summer period when vitamin deficiency in the rations is most pronounced, deviations in the content of vitamins and their metabolites in the blood and urine, as well as the incidence of hypovitaminosis symptoms in children are more frequently recorded and in the most pronounced form.
