Summary

Dietary unsaturated fatty acids influence blood clotting factors, specifically factor VII (FVII) activation and plasminogen activator inhibitor type 1 (PAI-1). These dietary effects on hemostasis may increase coronary heart disease (CHD) risk, particularly with unstable plaques.
