Summary

Consumer evaluations show beef chuck muscles like infraspinatus (IF) and triceps brachii (TB) are acceptable as steaks, but at a lower price point than the traditional longissimus dorsi (LM) cut. Palatability and appearance traits influenced consumer willingness to pay.
