A method for manufacturing superior set yogurt under reduced oxygen conditions

Reducing dissolved oxygen (DO) in yogurt mixes accelerates acid production by Lactobacillus delbrueckii ssp. bulgaricus and Streptococcus thermophilus. This DO reduction leads to improved yogurt texture and curd structure, especially at lower fermentation temperatures.
