Abstract:
Solid films of ovalbumin and of sodium polyglutamate both show dielectric constants of the order several hundred to several thousand together with marked dielectric hysteresis. It is suggested that these properties may result from ferroelectric behaviour and, if widespread among proteins, must have considerable physiological significance.
