Summary

Consumers perceive foods as healthier when they contain protein, fiber, calcium, and vitamin C, and lack saturated fat and sodium. Sugar content had less impact on perceived healthfulness in this study. Understanding these perceptions can inform front-of-pack nutrition labeling.

Purpose of the Study:

  • To determine the relative importance of various nutrients in consumers' perception of food healthfulness.
  • To assess how different nutrient content claims influence consumer judgments.

Main Methods:

  • An online consumer panel (n=320) evaluated hypothetical food products with varying nutrient declarations.
  • Conjoint analysis, logistic regression, and maximum likelihood estimation were used to construct utility functions.

Main Results:

  • Perceived healthfulness was most influenced by the presence of protein, fiber, calcium, vitamin C, and the absence of saturated fat and sodium.
