Color-stabilizing effect of lactate on ground beef is packaging-dependent

Potassium lactate improves ground beef color stability, but its effectiveness depends on the packaging method used. Modified atmosphere packaging (MAP) with carbon monoxide can mask lactate's color-enhancing effects.
