Sampling analytes from cheese products for fast detection using neutral desorption extractive electrospray ionization

This study introduces neutral desorption extractive electrospray ionization mass spectrometry (ND-EESI-MS) for rapid, nondestructive food analysis. The technique successfully differentiates cheese types based on their mass-spectral fingerprints without sample preparation.
