Casein versus soy protein: further elucidation of their differential effect on serum cholesterol in rabbits

With diets low in cholesterol, casein in comparison with soy protein exerted no hypercholesterolemic effects in rabbits. On a high-cholesterol diet, casein was sharply hypercholesterolemic compared with soy protein.
