Hazard Analysis and Critical Control Points (HACCP)01:30

Hazard Analysis and Critical Control Points (HACCP)

Hazard Analysis and Critical Control Points (HACCP) is a science-based, preventive system used globally to ensure food safety by identifying, evaluating, and controlling biological, chemical, and physical hazards throughout food production. Originally developed by NASA and the Pillsbury Company for astronaut food, HACCP is now a core component of the Codex Alimentarius.HACCP operates on prerequisite programs—such as Good Manufacturing Practices (GMPs), sanitation procedures, and supplier...
Sources of Food Contamination01:29

Sources of Food Contamination

Contamination of food by microbial agents and natural toxins poses significant risks to public health. These hazards can be introduced at various points across the food supply chain, ranging from environmental sources to processing and storage stages. Understanding these contamination pathways is critical for developing strategies to ensure food safety.Seafood is particularly vulnerable to contamination through both environmental exposure and microbial colonization. Toxins from harmful algal...
Measurement: Standard Units03:38

Measurement: Standard Units

Every measurement provides three kinds of information: the size or magnitude of the measurement (a number), a standard of comparison for the measurement (a unit), and an indication of the uncertainty of the measurement. While the number and unit are explicitly represented when a quantity is written, the uncertainty is an aspect of the errors in the measurement results.
Key Elements for Plant Nutrition02:35

Key Elements for Plant Nutrition

Like all living organisms, plants require organic and inorganic nutrients to survive, reproduce, grow and maintain homeostasis. To identify nutrients that are essential for plant functioning, researchers have leveraged a technique called hydroponics. In hydroponic culture systems, plants are grown—without soil—in water-based solutions containing nutrients. At least 17 nutrients have been identified as essential elements required by plants. Plants acquire these elements from the atmosphere, the...
Units and Standards of Measurement01:10

Units and Standards of Measurement

A physical quantity is defined either by specifying its measurement method or by stating how it is calculated from other measurements. For example, consider a metallic cube. We might define its mass and dimensions by specifying methods for measuring them, such as using a weighing machine and a meter scale. Then, we could define the volume by stating that it is the cube of its side, and we could calculate the density as the mass divided by the volume.
Measurements of physical quantities are...

Summary

A new European standard for food data documentation and interchange was developed by the CEN Project Committee on Food Data (CEN/TC387), promoting better food information management across member states.

Area of Science:

  • Food Science and Technology
  • Information Science
  • Standards Development

Background:

  • The European Food Information Resource (EuroFIR) Network of Excellence aimed to standardize food composition data documentation and interchange.
  • Existing differences among member states hindered seamless data sharing and utilization.

Purpose of the Study:

  • To establish a common European Committee for Standardization (CEN) Standard for food data.
  • To enable unambiguous identification and description of food data quality for databases, dissemination, and interchange.

Main Methods:

  • Establishment of the CEN Project Committee on Food Data (CEN/TC387) in 2008.
  • Development of a working draft standard based on EuroFIR specifications and GS1 GDSN standards.
  • Submission of an enquiry draft to CEN in early 2010, with a final standard anticipated in 2012.

Main Results:

  • The CEN Project Committee on Food Data (CEN/TC387) was formed, involving nine national standardization organizations.
  • A working draft standard was prepared in 2009, integrating EuroFIR and GS1 GDSN specifications.
  • An enquiry draft was submitted to CEN, paving the way for a ratified standard.

Conclusions:

  • The establishment of CEN/TC387 marked a significant milestone for the EuroFIR Network of Excellence.
  • Collaboration with the GS1 initiative is expected to improve the future standard's reach and adoption.
  • The future standard will enhance access to and interchange of well-documented food information.
