Purpose of the Study:

  • To investigate the bioavailability of pecan bioactive constituents.
  • To assess the impact of pecan consumption on postprandial antioxidant capacity and oxidative stress markers in humans.

Main Methods:

  • A randomized, three-treatment crossover study involving 16 healthy adults.
  • Test meals included whole pecans, blended pecans, and a control isocaloric meal.
  • Blood samples were collected at baseline and up to 24 hours post-ingestion to measure plasma antioxidant capacity (ORAC), tocopherols, catechins, oxidized LDL, and malondialdehyde (MDA).

Main Results:

  • Plasma gamma-tocopherol concentrations doubled after consuming whole and blended pecans.
  • Both hydrophilic and lipophilic oxygen radical absorbance capacity (ORAC) increased postprandially.
  • Consumption of whole pecans led to significant reductions in oxidized LDL and increased epigallocatechin-3-gallate levels.
  • The ratio of malondialdehyde (MDA) to triglycerides decreased significantly after pecan consumption.

Conclusions:

  • Bioactive compounds from pecans are absorbable by humans.
  • Pecan consumption enhances postprandial antioxidant defenses and may reduce oxidative stress markers.
  • These findings support the inclusion of pecans in the diet for their potential health benefits.
