Abstract:
Trans fatty acids (TFAs) are not synthesized in the human body but are found in many food products. Several reports have shown that high consumption of TFA is unrelated to the risk of metabolic diseases. Increased consumption of TFAs was reported to be positively correlated with risk of ischemic heart disease, as well as with initiation and progression of atherosclerosis. This work focuses on dietary sources and effects of TFA on the atherosclerotic process.
