Abstract:
A method is described for the determination of 4-hydroxyproline in meat using gas chromatography-mass spectrometry. The amino acid is converted into its N(O)-trifluoroacetyl n-propyl ester, gas chromatography being carried out with the mass spectrometer in the selected ion monitoring (SIM) mode giving high sensitivity and selectivity for the hydroxyproline derivative.
