Predicting rabbit carcass composition using external measurements is challenging. While hind leg meat-to-bone ratio offers some prediction, perirenal fat is a better indicator for dissectible carcass fat.
Area of Science:
- Animal Science
- Meat Science
- Agricultural Engineering
Background:
- Accurate prediction of rabbit carcass composition is crucial for optimizing meat production and quality.
- Breed differences and commercial liveweight targets influence carcass characteristics.
Purpose of the Study:
- To evaluate the predictive power of external measurements and retail cuts for rabbit carcass composition.
- To determine the efficacy of various measurements in predicting meat percentage, meat-to-bone ratio, and fat content.
Main Methods:
- Regression equations were developed using carcass composition data from two synthetic rabbit breeds (R and V).
- Measurements included external carcass dimensions, retail cuts, and specific fat depots.
- Sixty rabbits per breed were slaughtered at approximately 2kg liveweight.
Main Results:
- External measurements and retail cuts were poor predictors of carcass meat percentage and meat-to-bone ratio (R² < 0.53).
- Hind leg meat-to-bone ratio provided reasonable predictions for carcass meat percentage (R² = 0.60) and meat-to-bone ratio (R² = 0.69).
- Perirenal fat weight effectively predicted dissectible carcass fat weight (R² = 0.77) and fat percentage (R² = 0.69).
Conclusions:
- Simple external measurements are inadequate for precise prediction of rabbit carcass meat yield.
- Hind leg meat-to-bone ratio and perirenal fat weight show potential for predicting key carcass composition parameters.
