Hydrodynamic shockwave tenderization effects using a cylinder processor on early deboned broiler breasts

High pressure hydrodynamic shockwaves (HSW) show potential for tenderizing chicken broiler breasts. Early HSW treatment had no effect, but delayed treatment significantly reduced toughness.
