Objective:
To investigate the chemical variation and its mechanism in processing of Cibotium barometz.
Method:
The methods of TLC and HPLC were carried out to identify the chemical variation in processing of C. barometz, and the compounds changed significantly were isolated by chromatography.
Result:
Chemical components were changed significantly in processing of C. barometz.
Conclusion:
Maillard reaction is involved in the process of rhizome C. barometz, which may be contributed to the activity between raw and processed C. barometz.
