Effect of pre rigor stretching on beef tenderness development

Pre rigor stretching of beef loins did not improve tenderness. Although stretching increased loin length, it did not significantly affect shear force or proteolysis during aging. Further research is needed to optimize stretching techniques for enhanced beef quality.
