  • Four observers used a modified Comstock method to visually estimate food waste (vegetables, starches, main courses) on 551 meal plates.
  • Intermodal, inter-rater, and intra-rater reliability were calculated using intraclass correlation for absolute agreement.
  • Main Results:

    • The digital imaging method showed high agreement with real-time visual estimations for both regular (intraclass correlation=0.90) and modified-texture food waste (intraclass correlation=0.88).
    • Observer agreement was higher for regular diets (0.91–0.94) compared to modified-texture diets (0.82–0.91).
    • Intra-rater reliability was very high for both diet types (regular: 0.93–0.99; modified-texture: 0.91–0.98).

    Conclusions:

    • Digital imaging is a reliable and practical alternative to visual estimation for assessing main plate food waste in institutional settings.
    • The method is effective for both regular and modified-texture diets, though modified textures present slight estimation challenges.
    • This technology can enhance the feasibility and accuracy of dietary assessments in long-term care and similar research environments.
