In human women, oogenesis produces one mature egg cell or ovum for every precursor cell that enters meiosis. This process differs in two unique ways from the equivalent procedure of spermatogenesis in males. Background:

  • Hen and quail eggs are vital in embryological research.
  • Egg protein allergy (immunoglobulin E-associated) is known in the food industry.
  • No prior reports existed for embryology research workers.

Observation:

  • Two cases of egg sensitization identified in research workers.
  • A survey of 116 laboratory employees was conducted.
  • Sensitization assessed via skin prick tests and IgE measurement.

Findings:

  • Prevalence of egg sensitization was 6.1% among directly exposed workers.
  • All sensitized individuals reported digestive symptoms consistent with egg allergy.
  • Shorter exposure duration and less frequent hygiene use correlated with sensitization.

Implications:

  • Occupational egg sensitization is more common in research than the general population.
  • Digestive symptoms post-egg consumption may indicate sensitization.
  • Health evaluations for exposed workers should include egg allergy screening.
