Effects of chickpea flour on wheat pasting properties and bread making quality

Adding chickpea flour to wheat flour for baking increased pasting temperature and water absorption. While 10% chickpea flour maintained bread quality, higher amounts negatively impacted dough stability and bread characteristics.
