Summary

Ascorbic acid acts as an antioxidant or prooxidant depending on dose and vitamin E status. Supplementation spares vitamin E in deficient subjects but can promote lipid peroxidation in those with adequate vitamin E.

Area of Science:

  • Biochemistry
  • Nutritional Science
  • Animal Physiology

Background:

  • Ascorbic acid (vitamin C) exhibits dual roles as an antioxidant and prooxidant in animal tissues.
  • Its impact on tissue antioxidant status is influenced by dosage and vitamin E levels.

Purpose of the Study:

  • To investigate the dose-dependent effects of ascorbic acid supplementation on tissue antioxidant status.
  • To elucidate the interaction between ascorbic acid and vitamin E in maintaining antioxidant effectiveness.

Main Methods:

  • Animal models were used to assess tissue antioxidant status under varying ascorbic acid and vitamin E supplementation levels.
  • Lipid peroxidation and vitamin E levels were measured to evaluate antioxidant effectiveness.

Main Results:

  • Ascorbic acid supplementation in vitamin E-deficient subjects helped maintain vitamin E levels and antioxidant effectiveness.
  • High doses of ascorbic acid in vitamin E-adequate animals promoted lipid peroxidation and decreased antioxidant potential.
  • Increased vitamin E supplementation counteracted the prooxidant effects of high-dose ascorbic acid.

Conclusions:

  • Ascorbic acid's role as an antioxidant or prooxidant is contingent on vitamin E status.
  • Vitamin E requirements may increase with high-dose ascorbic acid supplementation.
  • Understanding this interaction is crucial for optimizing antioxidant strategies in animal health.
