Summary

Cooking frozen stuffed turkeys takes longer and results in increased weight loss and fat in drippings. Stuffing moisture decreases and fat content increases in frozen turkeys compared to thawed ones.

Purpose of the Study:

  • To evaluate the impact of initial turkey carcass temperature on conductive cooking.
  • To analyze cooking time, carcass yield, and stuffing quality.
  • To determine the safety of stuffing temperatures during cooking from frozen states.

Main Methods:

  • Frozen pre-stuffed turkeys were cooked conductively at 163°C to an 85°C internal breast endpoint.
  • Four treatments involved thawing turkeys to +5°C, -5°C, -15°C, and -25°C.
  • Measurements included cooking time, thigh and stuffing temperatures, carcass weight loss, and stuffing composition (moisture, fat, protein).

  • Internal body cavity stuffing temperatures may not reach safe levels when cooking from a frozen state, posing a potential food safety risk.
