This study optimized omega-3 polyunsaturated fatty acid (PUFA) fortified lipid-based nutrition supplements (LNS) using flaxseed oil. The developed LNS demonstrated good storage stability and consumer acceptance, improving the omega-6/omega-3 PUFA ratio.

Background:

  • Incorporating omega-3 polyunsaturated fatty acids (PUFAs) into lipid-based nutrition supplements (LNS) for undernourished populations is challenging due to shelf-life and acceptability issues.
  • Flaxseed oil (FO) is a potential omega-3 source, but its stability in LNS requires optimization.

Purpose of the Study:

  • To systematically develop an omega-3 fortified LNS using flaxseed oil.
  • To optimize processing stability and evaluate consumer acceptance of the omega-3 fortified LNS.

Main Methods:

  • Response surface methodology (RSM) was employed to optimize LNS formulations with varying levels of flaxseed oil (FO), antioxidant (ascorbyl palmitate), and emulsifier (soy lecithin).
  • Stability was assessed by monitoring peroxide value, oil separation, water activity, moisture content, hardness, and vitamin C content under accelerated storage conditions (6 months at 40°C).
