Choice Architecture in Appalachian High Schools: Evaluating and Improving Cafeteria Environments

This study assessed school cafeteria environments in three Appalachian high schools using a novel scoring tool. Results indicate opportunities to improve the healthfulness of school lunches and adolescent nutrition choices.
