Consuming red and processed meats moderately increases risks for all-cause and cardiovascular disease mortality. Even in a population with low meat intake, these associations highlight potential adverse health effects.
Area of Science:
- Nutrition Science
- Epidemiology
- Public Health
Background:
- Dietary patterns significantly influence health outcomes, with red and processed meat consumption being a focus of research.
- Previous studies suggest potential adverse effects of red and processed meats, but evidence on low-to-moderate consumption is still developing.
Purpose of the Study:
- To investigate the association between red and processed meat intake and all-cause, cardiovascular disease (CVD), and cancer mortality.
- To add to the evidence base regarding the health impacts of commonly consumed meats.
Main Methods:
- Prospective cohort study (Adventist Health Study-2) with 72,149 participants followed for a mean of 11.8 years.
- Dietary intake assessed via validated quantitative food frequency questionnaire (FFQ) and calibrated 24-hour recalls.
- Mortality data obtained from the National Death Index; statistical analysis using Cox proportional hazards regression.
Main Results:
- Unprocessed red meat intake was associated with increased all-cause mortality (HR: 1.18) and CVD mortality (HR: 1.26).
- Combined intake of red and processed meat showed associations with higher all-cause mortality (HR: 1.23) and CVD mortality (HR: 1.34).
- Processed meat alone was not significantly associated with mortality risk in this cohort.
Conclusions:
- Moderately higher risks of all-cause and CVD mortality are associated with red and processed meat consumption.
- These findings are significant even within a population characterized by generally low meat intake.
- The study underscores the importance of dietary choices in relation to long-term health and mortality outcomes.
