β-Lactoglobulin associative interactions: a small-angle scattering study

The stability of beta-lactoglobulin (β-lg) dimers in solution was investigated. Results show β-lg maintains its dimeric structure across various conditions, with conformational changes observed under specific salt and pH levels.
