  • Collected 33 samples of frozen fruit juice concentrates.
  • Diluted samples (1:4) and incubated at 25°C for 24 hours.

  • Total yeast populations ranged from <1.00 to 5.41 CFU/ml, increasing to 2.42-7.34 CFU/ml after incubation.

  • C. stellata was observed at a high frequency, potentially for the first time in juice concentrates.

Conclusions:

  • Frozen fruit juice concentrates harbor diverse yeast populations.
  • Saccharomyces cerevisiae, Candida stellata, and Zygosaccharomyces rouxii are key species to monitor in these products.
  • The high prevalence of C. stellata warrants further investigation.
