Main Methods:

  • Waxy maize and waxy rice starches were dry heated with phytic acid under alkaline conditions at 120°C for 6 or 24 hours.
  • Phosphorus content was measured.
  • 31P Nuclear Magnetic Resonance (NMR) spectroscopy was used for structural analysis.
  • Pasting properties, paste clarity, swelling power, melting temperature, and enthalpy were assessed.

Main Results:

  • Dry heating with phytic acid significantly increased the phosphorus content in both starches.
  • 31P NMR confirmed the formation of monostarch monophosphate.
  • Phosphorylation led to increased peak viscosity, breakdown, and setback viscosity.
  • Pasting temperature decreased, while paste clarity and swelling power increased.
  • Reduced melting temperature and enthalpy were observed in phosphorylated starches.

Conclusions:

  • Phytic acid is an effective reagent for phosphorylating waxy starches.
  • The phosphorylation process significantly improves key pasting properties of starch.
  • This method offers a viable route to enhance starch functionality for industrial applications.
