Corn oil influences starch-fatty acid complex formation. Triglycerides promote complexes with longer fatty acids (C16:0, C18:0) but inhibit those with shorter ones (C12:0, C14:0).
Area of Science:
- Food Science
- Biochemistry
- Material Science
Background:
- Starch-fatty acid complexation is crucial in food processing and texture.
- Understanding lipid-carbohydrate interactions impacts food product development.
Purpose of the Study:
- To investigate the impact of corn oil (triglycerides) on the formation of complexes with rice starch and various fatty acids.
- To determine how fatty acid chain length influences complex formation in the presence of oil.
Main Methods:
- Rice starch and fatty acids (lauric, myristic, palmitic, stearic) were analyzed.
- Complex formation was assessed using Rapid Visco-Analyser (RVA), X-ray Diffraction (XRD), Differential Scanning Calorimetry (DSC), and Confocal Laser Scanning Microscopy (CLSM).
Main Results:
- Starch-fatty acid complexes were confirmed; starch-triglyceride complexes were not detected.
- Triglycerides promoted the formation of starch-palmitic acid (C16:0) and starch-stearic acid (C18:0) complexes.
- Triglycerides inhibited the formation of starch-lauric acid (C12:0) and starch-myristic acid (C14:0) complexes, likely due to their higher solubility in oil.
Conclusions:
- The effect of triglycerides on starch-fatty acid complex formation is dependent on the fatty acid chain length.
- Oil presence can selectively influence the type and extent of starch-lipid interactions.
