Enzymatically Extracted Apple Pectin Possesses Antioxidant and Antitumor Activity

Enzyme-extracted apple pectins show enhanced antioxidant and antitumor properties compared to conventionally extracted ones. These "green" pectins are non-toxic and hold potential as functional food additives and in melanoma treatment formulations.
