Area of Science:

  • Food Science
  • Materials Science
  • Nanotechnology

Background:

  • Food-borne fungi and oxidation threaten food preservation and human health.
  • Traditional packaging lacks essential antimicrobial and antioxidant properties for active packaging.
  • Novel active packaging solutions are crucial for extending the shelf life of perishable foods.

Purpose of the Study:

  • To synthesize silver nanoparticles (AgNPs) from grape seed extracts (GSE).
  • To evaluate the antimicrobial and antioxidant activities of GSE-AgNPs and polyvinyl pyrrolidone-stabilized AgNPs (PVP-AgNPs).
  • To assess the efficacy of chitosan (CS)-coated GSE-AgNPs in preserving postharvest grape quality.

Main Methods:

  • Synthesis of AgNPs using GSE as a reducing agent.
  • In vitro evaluation of antimicrobial and antioxidant activities of GSE-AgNPs and PVP-AgNPs.
  • Application of CS-coated GSE-AgNPs and PVP-AgNPs on grapes, followed by storage at 20°C for 5 days.
  • Analysis of grape quality parameters including decay, weight loss, titratable acidity, and mold count.

Main Results:

  • Grapes treated with CS and GSE-AgNPs exhibited significantly lower decay percentage and weight loss.
  • Titratable acidity was maintained at higher levels in grapes treated with CS and GSE-AgNPs.
  • CS and GSE-AgNPs significantly inhibited total mold count during storage.
  • PVP-AgNPs showed less efficacy compared to GSE-AgNPs in preserving grape quality.

Conclusions:

  • Chitosan coating enriched with GSE-AgNPs demonstrates significant potential for preserving postharvest grape quality.
  • This active packaging approach effectively reduces spoilage and extends the shelf life of grapes.
  • GSE-derived AgNPs offer a sustainable and effective solution for active food packaging applications.
