Screening low-methanol and high-aroma produced yeasts for cider fermentation by transcriptive characterization

Two novel Saccharomyces cerevisiae yeast strains, WFC-SC-071 and WFC-SC-072, show excellent sugar utilization and desirable aroma profiles for cider production. These findings support the development of the cider industry by offering optimal yeast starters.
