Analysis of Chlorophylls/Chlorophyllins in Food Products Using HPLC and HPLC-MS Methods

Natural green food colorants like chlorophylls and chlorophyllins are popular but degrade during processing. Advanced analytical methods are needed to accurately identify these colorant fragments for safety and regulation.
