Area of Science:

  • Food Science and Technology
  • Agricultural Engineering
  • Bioprocess Engineering

Background:

  • Date syrup production traditionally relies on conventional heating (CH), which is energy-intensive and time-consuming.
  • Optimizing date syrup production requires efficient heating methods that preserve quality and reduce costs.

Purpose of the Study:

  • To investigate the efficacy of ohmic heating (OH) for Sukkary date syrup production.
  • To compare OH with conventional heating (CH) in terms of efficiency, yield, quality, and cost.
  • To optimize the electric field strength (EFS) for OH-assisted date syrup production.

Main Methods:

  • Ohmic heating (OH) was applied at varying electric field strengths (9, 10, and 11 V/cm).
  • Response surface methodology was employed to optimize the yield.
  • Key parameters including processing time, yield, physicochemical properties, and sensory characteristics were evaluated and compared to conventional heating (CH).

Main Results:

  • OH reduced extraction and evaporation times by 80% and 900% respectively, compared to CH.
  • Date syrup productivity increased by 86.11% with OH at 11 V/cm.
  • OH processing resulted in higher sensory scores and an 85.78% cost reduction compared to CH, with no significant impact on key quality parameters like moisture content and viscosity.

Conclusions:

  • Ohmic heating is a highly efficient and cost-effective alternative to conventional heating for date syrup production.
  • Optimized OH parameters, particularly at 11.5 V/cm, maximize yield and enhance sensory attributes.
  • OH technology offers significant energy savings and economic benefits in date syrup processing.
