Edible microcapsules containing antimicrobial peptides from Sichuan pepper were developed to extend shelf life. These natural coatings significantly enhanced pepper quality by boosting antimicrobial activity and antioxidant properties.

Area of Science:

  • Food Science
  • Material Science
  • Biotechnology

Background:

  • Sichuan pepper (Zanthoxylum bungeanum) is prone to spoilage, necessitating shelf-life extension strategies.
  • Natural antimicrobial compounds offer a promising alternative to synthetic preservatives for food applications.

Purpose of the Study:

  • To develop natural edible microcapsules for enhancing the shelf life of Sichuan pepper.
  • To encapsulate antimicrobial peptides from Sichuan pepper seeds using a water-in-oil-in-water (W/O/W) technique.

Main Methods:

  • Ultrasound and microwave-assisted extraction were used to obtain antimicrobial peptides.
  • Nisin was co-encapsulated with extracted peptides using a W/O/W emulsion method.
  • Microcapsules were characterized and applied as a coating to Sichuan peppers during storage.

Main Results:

  • Optimal encapsulation efficiency was achieved at a 3:1 ratio of extracted protein (EP) to gum Arabic (GA).
  • Microcapsule coatings significantly improved antimicrobial activity, total phenolic content (TPC), total flavonoid content (TFC), and DPPH radical scavenging activity of Sichuan peppers.
  • Specific formulations (S3 and S4) demonstrated superior preservation effects.

Conclusions:

  • Natural edible microcapsules are effective for improving the quality and extending the shelf life of Sichuan pepper.
  • The developed microcapsule technology presents a viable solution for natural food preservation.
  • Antimicrobial peptides and nisin encapsulation offers a dual-action approach for food safety and quality.
