- Salmonella was detected in various farm samples, including soil (16.7%), drying waste (20.4%), fallen berries (3.7%), threshed berries (14.3%), and dried peppercorns (22.2%).
- The pathogen was also found in processing plant samples: raw material (11.1%), export products (16.7%), and processing waste (16.7%).
- Twelve Salmonella serotypes were identified, with Salmonella Javiana being the most prevalent (38.8%). Post-harvest contamination was not eliminated during processing.
Conclusions:
- Salmonella contamination is present from the early stages of black pepper production through processing.
- Effective mitigation requires implementing good agricultural practices (GAP), good manufacturing practices (GMP), and Hazard Analysis and Critical Control Points (HACCP).
- Decontamination treatments should complement these practices to ensure final product safety.
