Nutrient and Phytochemical Composition of Nine African Leafy Vegetables: A Comparative Study

African leafy vegetables are rich in protein, fiber, vitamins, and minerals, offering a low-calorie, health-beneficial food source. Specific vegetables like African nightshade and cowpea leaves can combat deficiencies in provitamin A and essential minerals.

- Increased consumption can help mitigate micronutrient deficiencies, particularly provitamin A and iron.
