Abstract:
Esculin (ES) has antibacterial effects, but its low solubility and bioavailability limit applications. This study prepared an esculin phospholipid complex (ES-PC) via solvent evaporation. SEM, FTIR, XRD and 1H-NMR verified its amorphous structure formed by intermolecular forces. The solubility in water and n-octanol increased by 13.8-and 7.3-fold respectively compared to ES, and its hydrophilicity improved as the octanol-water partition coefficient decreased. In vitro, ES-PC had a cumulative dissolution rate of over 85% within 4 h, much higher than ES. When used in a composite film for pork preservation, ES-PC inhibited bacterial growth, maintained low pH and TVB-N values, and extended the meat's shelf-life. This research provides a new way to develop delivery systems for insoluble drugs, expanding their applications.
