Abstract:
This study investigated the effect of branching enzyme treatment on resistant dextrin preparation to assess its feasibility for incorporation into the production process. The structural, physicochemical, and functional properties of resistant dextrins subjected to different durations of branching enzyme treatment were tested. The degree of branching and molecular weight of the resistant dextrin subjected to 2 h of branching enzyme treatment were 44.11 % and 3.87 kDa, respectively. Its solubility and swelling power were 96.3 % and 1.27 g/g, respectively. However, when the treatment duration was extended beyond 2 h, the solubility and swelling power showed a tendency to decrease, which was negatively related to molecular weight. The dietary fiber content was 84.2 %. The glucose adsorption capacity (GAC) and glucose dialysis retardation index (GDRI) were 3.517 mmol/g and 35.53 %, respectively. Its dietary fiber content, GAC and GDRI were all higher compared to the other samples, which were affected by its higher degree of branching. The in vitro digestive experiment showed the lowest digestibility, which is ideal for preventing diabetes.
