Glutamic acid-mediated structural reconfiguration in thermally stressed liquid egg white: Decoupling colloidal

Abstract:
This study investigates the effect of glutamic acid (Glu) on the thermal aggregation behavior and foaming performance of liquid egg whites under heat stress. Results show that Glu reduces the apparent viscosity of egg whites by approximately 2.4 times under thermal stress, with particle sizes dropping below 100 nm. The solidification temperature increased from 56.75 °C to 61.07 °C, and concentrations above 1 % prevented bound water formation, slowing the liquid-to-solid transition. Glu enhanced foam height by 2.96 to 3.48 times and foam weight by 1.87 to 2.50 times, improving foam morphology. At concentrations over 3 %, Glu increased electrostatic repulsion and altered the protein's tertiary structure, reducing surface hydrophobicity. Overall, Glu effectively inhibited thickening of liquid egg whites and enhanced their foaming performance.
