Abstract:
Customized chatbot personas can meet the personalized needs of consumers and enhance user engagement in human-chatbot interactions. We conducted a study to investigate the influence of interacting with a chatbot customized as a health coaching assistant versus a gourmet recommendation assistant on participants' food choices. Participants were instructed to choose three dishes from a set of two meat and two vegetable options to compose a three-dish meal, both before and after they interacted with the health coaching assistant or the gourmet recommendation assistant. The results revealed a significant decrease in the frequency of meat-heavy meal selections after participants interacted with the health coaching assistant, compared to the gourmet recommendation assistant. These findings suggest that interacting with chatbots tailored as health coaching assistants can effectively nudge consumers toward more sustainable food choices. These findings highlight the potential of human-AI interactions in promoting sustainability and offer implications for the design and implementation of chatbots in the restaurant industry.
