Preparation of 3D-Printed Intelligent Label Loading with Natural Pigment Nanoparticles and Its Freshness Monitoring

This paper constructed a kind of MSA-BA-GE 3D-printed intelligent label loading with MSA-BA composite nanoparticles. Innovatively, MSA-BA composite nanoparticles were used as the color indicator system, viscous fluid gelatin solution was used as the matrix, and the mixture of MSA-BA composite nanoparticles and viscous fluid gelatin was put into a 3D printer to prepare a 3D-printed intelligent label. The microstructure, morphology, pH responsiveness, and food freshness monitoring performance of the MSA-BA composite nanoparticles and the MSA-BA-GE 3D-printed intelligent label were studied. The experimental results showed that the MSA-BA-GE 3D-printed intelligent label not only improved the stability of the natural pigment effectively but also exhibited a high pH responsiveness and obvious color change characteristics. This MSA-BA-GE 3D-printed intelligent label can be used to monitor the real-time freshness of fresh foods.
