Shellfish-derived peptides have gained increasing attention due to their unique structural features and diverse biological activities. As sustainable protein sources, shellfish-derived peptides have been demonstrated with nutraceutical and therapeutic potential, including antioxidant, antimicrobial, antihypertensive, anticoagulant, antitumor, immunomodulatory, and anti-inflammatory activities. To fully exploit these benefits, it is crucial to optimize extraction methods, purify target fractions, characterize peptide structures, and elucidate structure-activity relationships. This review highlights recent advances in preparation, isolation, and purification of shellfish-derived peptides, along with their structural characterization. Additionally, the mechanisms underlying their diverse bioactivities are discussed. Furthermore, strategies to enhance their bioavailability through encapsulation are also emphasized. Further investigation is required to fully characterize the structure-activity correlations of shellfish-derived peptides and optimize their industrial-scale production for specific functional applications.
