Multifunctional pea protein-corn starch films with green tea polyphenols: enhanced antimicrobial activity in beef

Abstract:
The use of biorenewable resources for the development of active packaging films, which can improve meat preservation, has significant importance. Composite films were developed using pea protein isolate, corn starch and green tea polyphenols (GTP). Molecular docking simulation evaluated the interaction mechanisms of GTP's bioactives with film matrices and assessed their antimicrobial mechanism. Atomic force microscopy revealed notable morphological alterations in active films. ATR-FTIR and XRD assessed molecular interactions and crystallinity, indicating hydrogen bonding among film components. GTP addition improved tensile strength and barrier properties against oxygen, water, and UV. A significant differences (p < 0.05) in the films' water-related properties, opacity, and color values were observed based on GTP concentration. The films demonstrated excellent antioxidant and antibacterial properties. The shelf life of beef was extended by up to 72 h through delayed microbial spoilage. This study provides insights into developing composite films with enhanced antibacterial activity through bioactive components for improved food packaging.
