Comprehensive characterization and comparison of polar lipids in bovine and donkey Milk based on Lipidomics

Abstract:
Milk polar lipids (PLs) are essential for mammalian growth and development. Donkey milk (DM), a milk source with unique nutritional components, has a relatively low lipid content and exhibits significant differences in lipid composition compared to bovine milk (BM). However, a systematic comparison of PLs between BM and DM remains lacking. In this study, lipidomics was used to characterize PLs in BM and DM. A total of 206 PLs species across 11 subclasses were identified. Among them, 150 significantly differential PLs (SDPLs) were selected for further analysis. SDPLs were mapped to lipid metabolic pathways, revealing involvement in 6 key pathways, including linoleic acid metabolism, glycosylphosphatidylinositol-anchor biosynthesis, sphingolipid metabolism, alpha-linolenic acid metabolism, glycerophospholipid metabolism, and arachidonic acid metabolism. These findings offer a valuable theoretical foundation for the future optimization of lipid composition in infant formulas and provide scientific support for evaluating the nutritional value of dairy products.
