Screening, synthesis and anti-fatigue function verification of selenopeptides

With the specification of selenium functional claims and the upward revision of dietary selenium recommendations in the National Food Safety Standard General Rules for Nutrition Labeling of Prepackaged Foods, the high bioavailability and synergistic anti-fatigue properties of organic selenium have become a focus of research. Based on the redox sensitivity of selenium and the target-regulatory function of the peptides, a high-throughput identification strategy of "theoretical computational-validation-experimental" was proposed. In terms of selenopeptide production, the enzymatic method significantly improves the hydrolysis efficiency through multi-enzyme synergistic immobilization, the genetic recombination and fermentation method overcomes the limitation of natural selenium resources, and the solid-phase synthesis achieves the precise positioning of selenium-containing amino acids. Selenopeptide regulates oxidative stress through the Keap1-Nrf2 pathway, optimises energy metabolism through the AMPK-PGC-1α axis and optimises the balance of 5-HT and DA neurotransmitters, thus forming a multidimensional anti-fatigue network with antioxidant, anti-inflammatory and neuroprotective properties.
