Background:

Purpose of the Study:

  • To investigate the thermal stability of liposomes containing stigmasterol and its esters.
  • To evaluate the protective effect of resveratrol against phytosterol degradation and oxidation.
  • To characterize the influence of fatty acid type in stigmasterol esters on thermal resistance.

Main Methods:

  • Liposomes were prepared with dipalmitoylphosphatidylcholine (DPPC) and enriched with stigmasterol (ST), stigmasteryl myristate (ME), or stigmasteryl oleate (OE), with or without resveratrol (RES).
  • Liposomal systems were characterized by transmission electron microscopy, zeta potential, and hydrodynamic diameter.
  • Samples were subjected to thermal stress (60 °C and 180 °C for 8 h) to assess degradation and oxidation.

Main Results:

  • Liposomes were stable at 60 °C but altered at 180 °C.
  • Resveratrol incorporation significantly reduced stigmasterol degradation and oxyphytosterol formation under thermal stress.
  • Fatty acid type influenced the thermal resistance of stigmasterol esters.

Conclusions:

  • Resveratrol effectively enhances the thermal and oxidative stability of liposomes containing stigmasterol and its esters.
  • Resveratrol-phytosterol liposomes show potential as thermally stable delivery systems, especially at moderate temperatures.
